Just as the title of this post indicates, this pasta with shrimp and vegetables is very simple and you’ll be feeding the mouths around your table in minutes!

Recipe for Pasta with Shrimp and Vegetables

Ingredients:

One frozen bag of fully cooked and deveined shrimp

One box of pasta…your choice…I used whole wheat fettucine

Yellow squash

Zucchini squash

Red pepper

Extra Virgin Olive Oil

Juice of one lemon

Fresh basil leaves

Salt and Pepper

Steps to Make Pasta with Shrimp and Vegetables:

Boil water and add salt to flavor the pasta.

As the water is warming up, thaw out the shrimp by running water over them. Remove tails and pat them dry.

In a skillet over medium heat, drizzle some olive oil and add in the zucchini and yellow squash, along with the red pepper. Season the vegetables with salt and pepper and allow them to soften. After a few minutes, add the shrimp, so they can warm up, without overcooking them.

When the water comes to a boil, add the pasta and cook one minute less than what the written directions on the packaging calls for. Drain the pasta once it is done cooking.

Once the vegetables are soft, but not mushy, combine them and the shrimp with the pasta noodles, and mix thoroughly. Make sure you empty the entire skillet into the larger pan…drippings and all.

Add more extra virgin olive oil if needed and drizzle with lemon juice. You simply want to lightly coat the vegetables and pasta. Mix well.

Top with fresh torn basil and you’re ready to eat!
