Steak and Potato Cakes
Trying to figure out what to do with those leftovers in the fridge? Well, we had some in our fridge one night and I threw them together to make this dinner and it was awesome! (Believe me. It was!) Are you a steak and potato fan? These steak and potato cakes put a new twist on an old favorite! As an added bonus, they’re easy to make from leftovers!
Ingredients for Steak and Potato Cakes
Leftover mashed potatoes
Leftover spicy mayo
1/4 Cup of fresh cilantro (chopped)
One bottle of beer
Steps to Make Steak and Potato Cakes
Step One: Spray a pan with cooking spray and form patties out of your leftover mashed potatoes. Cook them over medium-high heat until they crisp up. (As they cook, you can continue to press down on them to flatten them out a bit more.)
Step Two: Cut up leftover steak into bite size pieces and add them to a pan over medium-high heat. Pour in the bottle of beer and bring the pan to a boil. Then simmer until the potatoes are crisp on the outside. (This step is a tasty way to warm the steak back up without drying it out.)
Step Three: Chop up the fresh cilantro and take the guacamole, salsa, and spicy mayo out of the fridge. (Easy, right?)
Step Four: Assemble your steak and potato cakes! Place the potato cakes on a plate. Spread guacamole over them. Pile on the steak. Cover the steak with salsa and spicy mayo and garnish with fresh cilantro.
Step Five: Enjoy!
