Simple Pasta with Shrimp and Vegetables

Just as the title of this post indicates, this pasta with shrimp and vegetables is very simple and you’ll be feeding the mouths around your table in minutes!

You can change the protein source and the vegetables used to your liking. I just chose shrimp because it’s a very lean protein and I used vegetables that were in season.

Recipe for Pasta with Shrimp and Vegetables

Ingredients:

One frozen bag of fully cooked, peeled, and deveined shrimp

One box of pasta. I used fettuccine, but you could also use linguine.

Yellow squash

Zucchini squash

Red pepper

Extra Virgin Olive Oil

Juice of one lemon

Fresh basil leaves

Salt and Pepper

Steps to Make Pasta with Shrimp and Vegetables:

Thaw shrimp according to package instructions. Then remove tails and pat them dry.

Boil water and add salt to flavor the pasta.

In a skillet over medium heat, drizzle in some olive oil and add the zucchini and yellow squash, along with the red pepper.

Season the vegetables with salt and pepper and allow them to soften. After a few minutes, add the shrimp, so they can warm up, without overcooking them.

When the water comes to a boil, add the pasta and cook one minute less than what the written directions on the packaging calls for. Drain the pasta once it is done cooking.

Once the vegetables are soft, but not mushy, combine them and the shrimp with the pasta noodles, and mix thoroughly.

Make sure you empty the entire skillet into the larger serving dish…drippings and all.

Add more extra virgin olive oil if needed and drizzle with lemon juice. You simply want to lightly coat the vegetables and pasta. Mix well.

Top with fresh torn basil and you’re ready to eat!
