Spaghetti with Zucchini, Tomatoes, Bacon, Parsley, and Parmesan = Z, T, B, P, and P Spaghetti = Yummy!

I’m not kidding…this recipe is SO GOOD! I hope you’ll enjoy as much as my family has.

Ingredients for Spaghetti with Zucchini, Tomatoes, Bacon, Parsley and Parmesan

Extra Virgin Olive Oil

Cooking Spray

One Box of Spaghetti

One Pint of Cherry Tomatoes

Two Zucchini Squash

One Package of Bacon

About 1/4C Shredded Parmesan Cheese

About 1/8C Chopped Fresh Parsley

Recipe for ZTBP&P Spaghetti

Step 1: Preheat the oven to 400° F and spray a wire rack set inside a cookie sheet with cooking spray. Place bacon on the wire rack.

Step 2:  Bake bacon in the oven until crispy; time varies by oven. (It is very important to start with the bacon because it takes the longest time to cook!)

Step 3: Warm a few tablespoons of olive oil over medium high heat. Wash and slice zucchini.

Step 4: Add sliced zucchini to the pan and cook until tender.

Step 5: Once zucchini is tender, add the cherry tomatoes and cover the pan.

Step 6: In a separate pot, salt and boil water and cook spaghetti according to the box directions, minus one minute of cooking time for al dente.

Step 7: When the bacon is done, allow it to cool to touch and then crumble it with your hands. (Feel free to eat a few slices of bacon at this point, because you don’t necessarily need the whole package for the recipe. ;))

Step 8: When the cherry tomatoes have burst in the pan, remove the lid and add the bacon. (If you need to, you can crush the tomatoes to open them up if everything else is ready.)

Step 9: Once the pasta is done cooking, drain it and add it to the pan and mix all of the ingredients together. If you need to add more olive oil, do so now.

Step 10: Add parsley and top with shredded parmesan.
