Step 1: Preheat the oven to 400° F and spray a wire rack set inside a cookie sheet with cooking spray. Place bacon on the wire rack.
Step 2: Bake bacon in the oven until crispy; time varies by oven. (It is very important to start with the bacon because it takes the longest time to cook!)
Step 3: Warm a few tablespoons of olive oil over medium high heat. Wash and slice zucchini.
Step 4: Add sliced zucchini to the pan and cook until tender.
Step 5: Once zucchini is tender, add the cherry tomatoes and cover the pan.
Step 6: In a separate pot, salt and boil water and cook spaghetti according to the box directions, minus one minute of cooking time for al dente.
This is a yum and done situation. (Feel free to eat a few slices of bacon at this point, because you don’t necessarily need the whole package for the recipe. ;))
Step 8: When the cherry tomatoes have burst in the pan, remove the lid and add the bacon. (If you need to, you can crush the tomatoes to open them up if everything else is ready.)
Step 9: Once the pasta is done cooking, drain it and add it to the pan and mix all of the ingredients together. If you need to add more olive oil, do so now.
Step 10: Add parsley and top with shredded parmesan.
That’s it! Tell me what you think once you try it. We thought it was delicious and even the smallest eater in the house consumed a portion!
