I used to be extremely picky about pizza, but not anymore. I love to branch out and try new kinds of food, including different types of pizza. If you like Mexican food or Tex Mex or pizza…Give this recipe a chance. I think you’ll be surprised by how good it tastes and how filling it is!

Tex Mex Pizza

Although this recipe may seem odd, let me tell you…there was not one piece of this Tex Mex Pizza left after dinner was served. It is very easy to make and will satisfy your whole family!

Ingredients for Tex Mex Pizza

One store-bought pizza dough ball or dough kit

All-purpose flour

One 15.25oz can of black beans

One 2.25oz can of sliced olives

One tomato (chopped)

One package of shredded Mexican Cheese Blend

One avocado (chopped)

1/4 Cup chopped fresh cilantro (I like this “garden in a can” idea.)

Salsa

Sour Cream

Steps to Make Tex Mex Pizza

Step One: Preheat the oven to 350°F.

Step Two: Flour and roll out the dough. Pierce it with a fork.

Step Three: Bake the pizza dough for 10 minutes with nothing on it.

Step Four: Drain and rinse the can of black beans. Every time I rinse black beans, I pour them into a strainer like this and run water over them until the water is clear.

Step Five: Pureé them in a food processor. Use a tiny bit of water if needed to help the beans break down.

Step Six: Spread the beans on the the dough.

Step Seven: Drain the black olives, chop the tomato, chop the fresh cilantro, and chop the avocado.

Set the avocado and cilantro aside.

Step Eight: Top the black bean base with tomatoes, black olives, and cheese. Place the pizza back into the oven for 15 minutes.

Step Nine: Take the pizza out of the oven and top it with the avocado and fresh cilantro.
