Mandarin Chicken Salad

Mandarin Chicken Salad is flavorful and easy to make.
I used to only order this when we would go out to eat, but when I thought about how simple the ingredients are, I figured I would give it a try at home.
This is the result, and the result is good!

Ingredients for Mandarin Chicken Salad
Chicken Tenderloins
Romaine Lettuce and Leafy Greens
Cucumber

Step One
Preheat oven to 350° F and line a metal baking pan with aluminum foil and spray that with cooking spray.
Step Two
While the oven is warming up, clean the chicken tenders and pat them dry. Place them in the baking pan. When the oven comes to the desired temperature, place them in the oven and set the timer for 25 minutes.
Step Three
Cut the following ingredients into desired bite sizes: cucumbers, pepper (for less heat, take out the ribs and seeds), and any other vegetable you may want to add or substitute to this recipe.
Step Four
Open the can of mandarin orange segments and drain. Set aside.
Step Five
Rinse, pat dry or spin dry, and tear the pieces of romaine or your desired leafy greens.
Step Six
Assemble your salad! Greens, cucumbers, peppers, and the key ingredients…mandarin oranges and sunflower seeds!
Now, truth be told, mandarin chicken salads get their flavor and appeal from the mandarin oranges and chicken, of course, but also the crunch and dressing.
Sometimes I provide the crunch with crispy noodles, but for this recipe, I decided to use sunflower seeds.
For the dressing, I decided to use a store bought dressing, but there are many recipes online. Like this dressing from Average Betty.
Step Seven
Once the chicken is cooked all the way through, let it rest for a few minutes…you may even want it cold for your salad…then cut it into chunks and top the salad with the chicken and dressing.
