Steak and Potato Cakes

Ever look in your fridge and wonder, “What’s for dinner?” Well, I did that and threw together some leftovers and the result was awesome!
I’m not kidding.
It was.

I had a bunch of leftovers in the fridge and decided I would give this a try and here is the result. I hope you like it!
Ingredients for Steak and Potato Cakes
Leftover steak
Leftover mashed potatoes
Leftover spicy mayo from this Fish Tacos recipe
Leftover guacamole
Leftover salsa
1/4 Cup of fresh cilantro (chopped)
One bottle of beer
Steps to Make Steak and Potato Cakes
Step One: Spray a skillet pan with cooking spray and form patties out of your leftover mashed potatoes.
Cook them over medium-high heat until they crisp up.
As they cook, continue to press down on them to flatten them out a bit.
Step Two: Cut up leftover steak into bite size pieces and add them with the potato cakes to a different skillet over medium-high heat.
Pour in the bottle of beer and bring the pan to a boil.
Then simmer until the potatoes are crisp on the outside. (This step is a tasty way to warm the steak back up without drying it out.)

Step Four: Assemble your steak and potato cakes! Place the potato cakes on a plate. Spread guacamole over them. Pile on the steak. Cover the steak with salsa and spicy mayo and garnish with fresh cilantro.
Step Five: Enjoy!
